Few dishes are as comforting, nourishing, and versatile as shakshuka. Traditionally made with eggs gently poached in a rich tomato sauce, this one-pan meal can easily be adapted for a plant-based lifestyle without sacrificing flavor or satisfaction.
Packed with colorful vegetables, antioxidant-rich tomatoes, and warming spices, shakshuka is a beautiful reminder that healthy food doesn’t need to be complicated.

Ingredients
1 medium onion, diced
1 red bell pepper, diced
3 cloves garlic, minced (optional)
1 can (28 oz) crushed tomatoes
1 tablespoon tomato paste
1 teaspoon paprika
1 teaspoon cumin
½ teaspoon sea salt
¼ teaspoon black pepper
¼ cup fresh parsley, chopped
2 tablespoons fresh cilantro, chopped (optional)
Choose Your Protein
Traditional Version
4–6 large eggs
Plant-Based Version
1 block (14 oz) extra-firm tofu, drained and cubed
Optional: 1–2 teaspoons nutritional yeast
Optional: pinch of turmeric
Instructions
Place a large skillet over medium heat. Add the onion and bell pepper with a splash of water or vegetable broth. Cook for 5–7 minutes until softened.
Add the garlic, paprika, cumin, salt, and pepper. Stir for about 1 minute until fragrant.
Mix in the crushed tomatoes and tomato paste. Bring to a gentle simmer and cook for 10–15 minutes, allowing the flavors to develop and the sauce to thicken slightly.
For the Egg Version
Using the back of a spoon, create small wells in the sauce. Crack an egg into each well.
Cover the skillet and cook for 5–8 minutes, or until the eggs reach your preferred level of doneness.
For the Plant-Based Version
Add the cubed tofu directly to the simmering sauce. Stir gently and cook for 5–7 minutes until heated through.
For a subtle “eggy” flavor, stir in the nutritional yeast and turmeric during the final few minutes of cooking.
Remove from heat and garnish with fresh parsley and cilantro.
